Creative and ambitious, Eddie uses modern cookery techniques and culinary flair to produce innovative dishes that challenge any preconceptions of what vegetarian food can be.  

Buzzing with enthusiasm he’s driven by a desire to show just how brilliant, cleverly conceived, meat-free cuisine can be. His food is a far cry from brown rice and boiled veg, think instead of clouds of scented fog and crackling fizzing delights (although he’s not above doing a good simple broth … but with perhaps a little science of taste thrown in for good measure).

Passionate and full of enthusiasm Eddie is beginning to make a name for himself in the culinary world as a young chef to look out for and expect big things from in the future. Modern vegetarian food being one of the least considered, but rich in potential, areas of contemporary gastronomy. 

Especially as people become increasingly conscious of where their food comes from and how it is produced whilst still desiring interesting, exciting food and chefs this is where Eddie fills a void with his unique, sometimes avant-garde take on cooking.

When he’s not hard at work in the restaurant Eddie finds time to write for food magazines, perform cooking demonstrations, conducts weird and wonderful experiments in what some of his colleges now dub ‘the lab’ (the small but high tech kitchen in his flat), and does some media bits and bobs including having cooked on the BBC’s ‘The One Show’.  Mostly though, any free time is spent working on his own ideas and developing dishes, which show how thrilling veggie food can be with a little imagination.
